Chatham Man to Open Flagship Restaurant in Morristown

Jason Scott used his travels in California and Mexico as inspiration for The Taco Truck.

Partners Jason Scott and Chris Viola are opening the flagship restaurant of The Taco Truck around mid-August in Morristown at 50 Morris St., next to 7-Eleven.
The cuisine is authentic Mexican taqueria, locally sourced, organic and sustainable.

Scott and his co-founder Shachar Scott used their experiences from their travels in Mexico and California as inspiration for The Taco Truck. They wanted to bring the “culture surrounding authentic taquerias and food trucks to the East Coast,” according to the business' website.

Scott grew up in Chatham, and his East Coast experiences are part of why he wanted to bring The Taco Truck to his native area. “We knew this was always a market we wanted to get into,” said Viola, adding that they picked Morristown because “we really like the demographics of the town and it draws from a lot of the surrounding areas. We were looking for a year and a half. The landlord has been very accommodating.”

Ample parking was also another reason why they picked Morristown.

They pair look to open in mid-August with a menu that features beef, chicken and pork raised on a vegetarian diet without hormones and antibiotics. Its signature dish is the Taco Pescado: crispy catfish, red cabbage, pico de gallo, Mexican tartar sauce and chipotle salsa.

BYOB is allowed, and there will be room for 60 seats inside and 40 seats outside. 

Like its other New Jersey store in Hoboken, they will use a "Beyond LEED" design, will compost all food waste, and all to-go packaging is biodegradable and compostable. Also, in keeping with its sustainable best practices, there will be a wall of recycled skateboards, water-conserving bathrooms, rainwater collection for watering plants and a 20-foot Dracaena tree inside the restaurant.
